Determinación de la disponibilidad de un sistema de refrigeración industrial para la industria atunera // Determining the availability of an industrial refrigeration system for the tunny industry
Abstract
Los sistemas de refrigeración en las industrias alimentarias, son de gran relevancia para la conservación de la calidad y estándares de seguridad de las materias primas, por este motivo, el presente trabajo tuvo como objetivo la determinación de la disponibilidad y la etapa de vida operativa de un sistema de refrigeración de una industria atunera. La metodología que se utilizó fue el modelo de distribución de Weibull y el método de Mínimos Cuadrados para la determinación de los parámetros de forma y escala de Weibull. Los resultados del cálculo de los parámetros de Weibull permitieron conocer que la disponibilidad de la cámara 1 y 2 del sistema estudiado eran del 97 % y 90 % respectivamente, además se identificó mediante el uso de la curva de Davies los valores del parámetro de forma de 0,6936 y 1,0673 lo cual indico que la cámara 1 se encontraba en un periodo de fallos iniciales y la cámara 2 en una etapa de desgate por envejecimiento. Finalmente, se concluyó que la cámara 1 al encontrarse en una etapa inicial de funcionamiento, no presentaba daños significativos en sus componentes y tenía una mayor disponibilidad operativa.

Abstract
The refrigeration systems in the food industries are of great relevance for the conservation of the quality and safety standards of the raw materials, for this reason, the present work had as objective the determination of the availability and the operational life stage of a refrigeration system of an tuna industry. The methodology used was the Weibull distribution model and the method of least squares for the determination of the Weibull shape and scale parameters. The results of the calculation of the Weibull parameters allowed us to know that the availability of chamber 1 and 2 of the studied system were 97 % and 90 % respectively, in addition, the values of the shape parameter were identified by using the Davies curve. 0.6936 and 1.0673, which indicated that chamber 1 was in a period of initial failures and chamber 2 in a stage of wear due to aging. Finally, it was concluded that chamber 1, being in an initial stage of operation, did not show significant damage to its components and had greater operational availability.
